Roast Potatoes & Radishes

What you will need

Baby potatoes
Pearl onions
Radishes
Olive oil
Thyme
Sea salt and freshly ground black pepper

 

1. Preheat oven to 225°C).

2. In a large bowl, rub the potatoes and pearl onions with a generous amount of olive oil, thyme, crushed garlic, salt, and pepper. Line your roasting pan with baking paper and spread the potatoes and onions evenly across the pan. Place in oven and let roast for 15-20 min. Do not discard your mixing bowl.

3. Whilst the potatoes and onions are cooking, place your washed radishes into the same bowl and rub with the same olive oil, thyme, salt, crushed garlic, and pepper mix. Add a little more of whichever ingredient is lacking if necessary. 

4. After 20 min, remove pan from oven and toss the potatoes around to ensure that they are evenly cooked on all sides. Add the radishes to the pan together with the potatoes and cook for another 15-20 minutes. 

5. Serve with olives and your choice of cream or creamy side dish. I enjoyed these with a side of fresh cottage cheese!
