Ancho Pepper Fried Green Beans

  • 300g green beans (tops and tails trimmed)

  • 1 large ancho pepper

  • 2 cloves garlic (crushed & finely chopped)

  • 2 tsp onion powder

  • olive oil for drizzling

  • Salt to taste

  • 1 tsp cayenne pepper (optional)

  • Canola oil (enough to half immerse green beans)

1. Wash the green beans and set them aside to drain excess water.

2. Finely chop the ancho pepper. Toss together with garlic, onion pepper, salt, and cayenne pepper (if using) and drizzle with olive oil. Toss in green beans and coat evenly.

3. In a large pan (or wok pan if you have one), heat the canola oil over high heat until shimmering. Fry green beans until they turn golden brown and appear a little shrunken (5-8 min).

4. Serve with a drizzle of lemon juice and enjoy!
